I'm a big fan of sandwiches... and cheese... and grilling... so when you put cheese in a sandwich, and then grill it... that is basically my heaven.  I take my grilled cheese experiences seriously, always trying to do something new and delicious.  Add cream cheese, different breads, use bacon or even one time guacamole.  But last night I came across a chef video who does something to grilled cheese I'd never even considered, put cheese on the outside!  So when it the sandwich is in the frying pan it gets a delicious crunchy cheesy shell.  Mind. Blown.

Even better, it's an extremely simple recipe:
Cheddar Cheese

Melt the butter in the pan, add two slices of bread.  Add cheese ontop of one slice, then stack the other slice of bread with butter side up.  Add more cheese to the top then flip and fry it for a few minutes. Add more cheese to top and flip and repeat.  Eat.

And for the record here was my last attempt at making a grilled cheese mimicking something i found on the internet.  Yes it was delicious but insanely complicated.  Bacon Guacamole Grilled Cheese with artisan bread... took forever and still didn't come out looking anything like the inspiration picture
