Keith Urban Says Not Talking is Good
Keith Urban had vocal chord surgery a few years ago and after that he couldn’t talk for three weeks. Losing the ability to speak made him a better communicator because writing taught him to make his thoughts clear. Keith says, “some songwriters spend their entire lives trying to learn that lesson.”
Kimberly Loves Her Coco-Cola Cake
As a child, Kimberly from Little Big Town pretended she had a cooking show and now she’s in her third season of Kimberly's Simply Southern on GAC. She says her favorite thing to make is Coca-Cola cake! When her life gets too busy, she remembers her great-grandma who had 11 kids and walked seven miles to and from work every day.
Kimberly’s Honey Baked Ham
4-6 pound bone-in ham, fully cooked
1/3 cup dark brown sugar
1/3 cup honey
2 teaspoons cornstarch
¼ teaspoon red pepper flakes
¼ teaspoon cayenne pepper
Preheat oven to 350 degrees.
Place ham on a rack in a foil-lined roasting pan fat side up. Roast for an hour and a half.
Meanwhile, in a medium saucepan over medium heat, mix all ingredients together. Stir until it forms a nice thick glaze. Rub on half of the glaze and bake for another 30 minutes. After the 30 minutes, add the remaining glaze and cook until internal temperature reads 140, about an additional 30 minutes. Remove from oven and allow the ham to rest for at least 15 minutes before serving.
Kimberly’s Fried Green Tomatoes with Barbeque Buttermilk
Coconut oil for frying
1½ cups cornmeal
1 teaspoon paprika
½ teaspoon cayenne
1 teaspoon salt
½ teaspoon pepper
1 cup flour
3 eggs, beaten
2 green tomatoes, sliced
Preheat frying oil to 350 degrees. In a shallow dish, place cornmeal, paprika, cayenne, salt and pepper. Mix well. Place flour into a separate shallow dish. Place beaten eggs into another shallow dish. Dredge slices of tomato into the flour, then the eggs, then in the seasoned cornmeal. Add breaded tomatoes to oil and fry about 3 minutes each side until golden brown. Remove and drain on paper towels. Season with salt and pepper.
For the barbeque buttermilk sauce
¼ cup buttermilk
1 tablespoon apple cider vinegar
1 teaspoon brown sugar
½ cup mayonnaise
2 tablespoons barbecue sauce
1 teaspoon lime juice
Salt and pepper, to taste
Mix all ingredients in a bowl. Season with salt and pepper to taste.
Kimberly's Coca-Cola Cake
2 sticks unsalted butter
3 tablespoons cocoa
1 cup coca-cola
2 cups marshmallows, mini's
2 cups cake flour (unsifted)
2 cups sugar
1/2 cup buttermilk
2 eggs, beaten
1 1/2 teaspoons baking soda
1 teaspoon vanilla
2 cups heavy cream
1/2 cup confectioners' sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped
Preheat oven to 325 degrees. Spray 9x13 pan with non-stick spray. In a small pot add butter, cocoa, cola and marshmallows. Melt and stir to incorporate. In a large mixing bowl add flour, sugar, buttermilk, eggs, baking soda and vanilla. Whisk to stir. Slowly add the butter mixture and incorporate into the batter. Pour batter mixture into a 9x13 pan. Place in oven and bake at 325 degrees for 45-55 minutes.
For the Chocolate Icing:
In a large saucepan, bring 2 cups heavy cream, 1/2 cup confectioners' sugar, and 1/8 teaspoon salt to a boil. Remove from heat; add 1 pound bittersweet chocolate, roughly chopped, and let stand, without stirring, for 1 minute.Whisk just until combined. Refrigerate, stirring occasionally, until spreadable, about 1 hour or keep at room temperature.
