As a working mom, one of the most daunting tasks I face is answering that one question...
Of course I have my quick go-to recipes that are fast & easy ... taco salad, cheese enchiladas, mac-n-cheese & hotdogs...
But I'm tired of those ol' standbys so I decided to go on a quest for "working mom friendly" recipes. I found what I thought was the PERFECT recipe... healthy, easy & quick. Brilliant.
Honey Sesame Chicken (Freezer to Crockpot Meal)
1 lb chicken tenders
3 T olive oil
1 cup honey
2 T sesame seeds
1/2 cup soy sauce
1 tablespoon sesame oil
1 t. salt
1 t. pepper
1 package frozen Asian Vegetable mix or broccoli
Place all ingredients in freezer bag, toss to coat and freeze. When ready, place in crockpot and cook on low for 4-5 hours. Remove chicken and shred, then return to sauce. Serve over hot cooked rice.
It doesn't get any easier than that. I'm a pretty good cook, so this should be a breeze...
Apparently my crockpot gets hotter than the average crockpot. Instead of coming home Tuesday night to a fantastic meal, I arrived to the stench of burnt chicken & broccoli. :( Out to dinner we went.
This weekend I'm on the quest for a better crockpot!
