I got a slow cooker a few months ago and I don't want to exaggerate but it has basically revolutionized my life. I can cook delicious food that I can eat for days and it is incredibly cheap to get ingredients. But even more important is just how easy it is to cook. Throw some stuff into the pot, go to work, come back to delicious smells and ready made dinner. But by far the easiest and cheapest meal I've found so far is Salsa Chicken.
Here are the ingredients:
I've made it twice now, the first time I used chicken breast and the 2nd time I used chicken thighs and they both turned out great.
All you have to get is 1 or 2 cans of your favorite salsa (1 can for 4qt cookers or 2 for 6+qts, add a bit of water if the chicken isnt covered) Dump them into the slow cooker add the chicken and slow cook on low for 4 to 6 hours. When you take the chicken out you can shred it with a fork and it is incredibly juicy. Great to eat plain or add sour cream and cheese and make chicken tacos. Add taco seasonings or spices of your choice to the chicken before you put it in the slow cooker if you really want to go crazy.
Here is another dose of warm fuzzies for you. An Amtrak station in Chicago put out a magical piano in it's lobby. It would play appropriate music as people rushed by or play along the harmony if somebody decided to tickle the ivories themselves. Watch as kids, professional musicians and one grumpy grouch interact with it.
I came across this video today of an insane logging helicopter pilot from oregon. Watch as he defies all known laws of physics to get tons of christmas trees onto these logging trucks. If this is what happens to a Christmas Tree before it ends up being sold in a parking lot in West Texas then Christmas Tree's just got a whole lot more epic
Christmas Tree harvesting at Noble Mountain Christmas Tree Farm in Oregon. Pilot Dan Clark flying a Northwest Helicopters, LLC 206B3 Jetranger November of 2008. Oregon is the nation's biggest producer and exporter of Christmas trees, selling about 7.3 million trees a year, more than twice that of No. 2 North Carolina.
The picture above is the same type of Helicopter used in the video
You may remember Blake Shelton had a Christmas Special on NBC last year. It was called Blake Shelton's Not So Family Christmas... and it really lived up to the name. Here is one of my favorite clips from that special. Blake and Larry the Cable Guy decide to go hunting... then things really escalate quickly. People who don't want to look at extreme claymation violence shouldn't watch, but if extreme claymation violence seems hilarious go right ahead.
Here is the latest thing that has caused me to laugh out loud at the office. A video of a squirrel (affectionately called Tippy) who keeps passing out. Experts think it might be a rare condition called Myotonia Congenita that causes muscles to suddenly relax (That is actually pretty common in goats, if you have ever seen a fainting goat video). I however like to think Tippy just might be enjoying some fermented pumpkins left out from Halloween too long.
